I am looking for one pot wonders or casseroles that I can fix and have just to heat up or in the crock pot when we get in from practices and things. If you have any ideas feel free to email me at ken.nwservices@gmail.com

TACO SOUP

1 lb lean ground beef (or turkey)
1 onion, chopped
1 pkg taco seasonings
1 pkg dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.
Top with a bit of grated cheese or sour cream


THis freezes well too. I always add different veggies each time as well Smiler

An old classic

Hungry Boy Casserole

1/2 c. chopped celery
1/4 c. chopped onion
1/4 c. chopped green pepper
1 lb. lean ground beef
1 (16 oz.) can pork 'n beans
1/4 c. ketchup
1/4 c. water
1/2 tsp. salt
1/2 tsp. garlic powder

Sprinkle first 3 ingredients in an 8 inch baking dish. Crumble the ground beef on top and bake at 425 degrees for 20 minutes. Remove from oven and stir in remaining ingredients and bake at 425 degrees for 15 to 20 minutes.

Goes great with biscuits -- you can even bake them with the casserole... at the last step (after you've stirred in the remaining ingredients) just lay unbacked biscuits onto the top and then bake as instructed.

We occasionally change things around and add or substitute various vegetables to the mix (a good way to "repurpose" leftovers)... you just have to be careful about what can fit in the baking dish.

Brown beef and onions then stir in flour to coat the meat (yes its a gravy of sorts) add in milk and s&p and needed til desired thickness stir and as it cools it will thicken more.. slap on toast and there ya go

TATER TOT CASSEROLE

Since you have a big family, I'm going to give you the recipe that feeds 6 of us and still has left overs.

2 lbs ground beef
2 cans of cream of mushroom soup
2 cups of shredded cheese (1 bag)
1 bag of tater tots

Brown the beef in a skillet (I pour in some of those chopped dried onions, too. They're so small the kids can't see them but still taste good)
I also season it a bit with some garlic salt or garlic

Drain that and add the 2 cans of soup and a splash of Worcestershire sauce

Pour all that into a cake pan and sprinkle the cheese all over the top of it.

Lay the tater tots out on top of the mixture in a single layer and bake at 350 for 30 minutes.

I serve it with cornbread and green beans Smiler

A time saving idea is to freeze browned ground beef. Takes very little time to defrost (freeze flat in a zip lock freezer bag) and you have beef cooked and ready for all sorts of dishes. Cuts lots of time off of dinner prep.

Hamburger pie

ground beef (calls for one pound, I double everything)
Onion soup mix (I vary between taco seasoning, italian spices {use moz chese and add garlic}, greek seasoning {feta cheese})
2 eggs (4 if you double)
1/2 cup mayo (tomato sauce, small can, for italian spices etc. double)
1/4 cup milk (omit if I use spices where this doesn't work)
8 oz cheddar cheese shredded (or appropriate cheese for spices)
salt and pepper to taste

Brown meat, drain fat. In bowl (big) mix other ingredients then add meat and 1/3 of cheese. Poor in baking pan, top with remaining cheese, bake for 30 min at 350. Let sit for 10 or so before cutting and serving.

Depending on your choice of cheese, spices, liquid, results will vary. Sometimes it cuts like a pie, sometimes it dips like a casserole.

I put sour cream on it if I make the taco flavored, with the onion soup mix I dip bites in ketchup. Great base for all sorts of taste.

Kids love the taco and the onion soup kind.

Mushroom and Cheddar Quiche

6 eggs
1/2 cup milk
1/2 cup half and half
8 oz cheddar cheese of your choice (can use swiss)
1/2 pound mushrooms (can use broccoli, spinich, onions, get creative)
2 tbl sp butter
salt, pepper to taste
garlic powder (I use fresh)
onion powder (I use toasted onion powder or fresh)
Store bought pie crust (or make your own)

Saute mushrooms in butter until tender and slightly browned. season with salt, pepper, garlic (if using fresh add at the end and take off heat), other seasonings. Four pieces of crumbled bacon (fried) is good too.

Grease pie pan, put in crust, make purty edges, preheat oven to 350.

Beat eggs (big bowl)and milk and half and half, add cheese, mushrooms and mix well. Poor into pie pan. Bake for 3 minutes, serve with salad, fresh fruit etc. Good for breakfast too.

Quiche is very easy and great for using up leftovers, sausage, hamburger, bacon, veggies, and it is YUM!

I got this recipe from my husband's aunt back East last August after she made it for us. However, I doubled the carrots and celery listed.

BLOODY MARY CHICKEN

4 boneless & skinless chicken breast
1 (33oz) bottle Bloody Mary mix
1 cup chopped celery
1/2 cup chopped onion
1 cup chopped carrots

Place all ingredients in crockpot on "low" for 8-hrs. Serve over rice.
